Ingredients

  • 50g pork belly, cut into bite-sized pieces (Bacon or thinly sliced pork works as well.)

  • 1 clove garlic, minced (For rich aroma.)

  • 1/2 stalk green onion, finely chopped (For freshness.)

  • 1 stalk garlic chives (optional), finely chopped (For extra garlicky flavor.)

  • 1 egg, beaten

  • 0.7 cup cooked rice (Preferably day-old rice for the best texture.)

  • 1 pinch salt (To enhance the umami.)

  • 1 tbsp soy sauce (For deep umami flavor.)

  • 1 tbsp oyster sauce (Adds richness.)

  • Cooking oil, as needed (For frying.)

Directions

  • Sear the Pork
Heat a frying pan over medium heat and add a little cooking oil.
Add the pork belly pieces and cook until slightly crispy and golden brown.
Remove the pork from the pan and set it aside.
  • Prepare the Aromatics
Mince the garlic, chop the green onions, and garlic chives (if using).
Beat the egg in a small bowl.
  • Sauté the Garlic
Using the remaining pork fat in the pan, turn the heat to high and add the minced garlic.
Stir-fry until fragrant but not burned.
  • Add the Egg & Rice
Quickly add the beaten egg to the pan.
Immediately follow with the cooked rice, stirring quickly to combine.
Sprinkle a pinch of salt over the rice to enhance flavor.
  • Mix in Pork & Green Onions
Return the cooked pork belly to the pan, along with the chopped green onions and garlic chives.
Stir everything together to distribute flavors evenly.
  • Add the Sauce
Move the rice to the side of the pan, creating an open space in the center.
Pour in soy sauce and oyster sauce, letting them heat up slightly before mixing them into the rice.
Stir-fry for another 30 seconds until the sauce is evenly distributed.
  • Serve & Enjoy!
Transfer to a plate and enjoy your garlicky, umami-packed fried rice!

Notes

  • For the best texture: Use cold, day-old rice to prevent stickiness.
For a smoky finish: Let the rice sit untouched for 30 seconds before stirring to create a crispy layer.
For extra spice: Add a pinch of red pepper flakes or Sriracha.
For a richer taste: Try adding butter at the end for extra umami.
For meal prep: Store leftovers in an airtight container and reheat in a frying pan for the best texture.
